Stocking up the Freezer: Part 1

I plan on stocking up the freezer for when the baby comes. Since we are on a tight grocery budget, this is going to be a gradual process. My parents gave us about a dozen ears of corn so this morning I worked on getting some cut-up corn on the cob in the freezer. I plan to make a few more batches when the corn gets a little better.

Other things that I want to get into the freezer:
1. Homemade hamburger buns
2. Hamballs (my mom's recipe)
3. TatorTot Casserole
3. Homemade Breakfast Hot Pockets
4. Some sort of muffins for hubby to take with lunches
5. Pasta E Fagiolo Soup (similar to Olive Gardens)

1. First you need to shuck the corn and remove all the silk

2. Boil a large pot of water and add as many ears of corn as you can (I had to do two batches)
3. Boil covered for 4-6 minutes
4. Remove from water and place in an ice bath until cool (about 5-10 minutes)
(We had an empty tray of ice in the freezer so I had to resort to the ice pack!)


5. Stand the ear up and cut the corn off the cob. An easy trick is to use a bundt cake pan to place the ear in the center and then the corn falls into the pan.
6. Label the freezer bag or container and lay flat to freeze. I was able to get 6 bags worth. I like to add a pad or two of stick butter as well.

Great job and that corn is really going to taste good this Winter when there is none around. I remember doing that for a whole day as a kid. For some reason we have lost that art of storing and preparing our own food. Good for you to bring that back!
